I made my first vegan quiche! I didn’t follow a specific recipe because I didn’t get to go shopping and only used what I had in the house. It ended up working really well and Shaun loved it, which is what counts the most. Plus, the healthiness factor, of course. I used brown rice for the crust, with some vegan parmesan cheese. I didn’t know how filling it would be on it’s own, so I made a bean salad to go with it. Turns out it was a mighty filling meal and we have leftovers of both for lunch tomorrow!

Here is a detox smoothie that will get your system back in shape.  The pear and the apple add sweetness and helps balance the grassy notes of the kale.  Enjoy!

Green Detox smoothie

Ingredients:

  • 1 cup kale 
  • 1 pear peeled and cored
  • 1 apple peeled and cored
  • 1 slice of lemon
  • 1/4 inch piece or ginger
  • 1 cup ice cubes

Method:

Combine all the ingredients in a blender and process until smooth.

Yum! I want this now.

Oil-free sweet and sour stir-fry with quinoa udon noodles and arrowroot-coated tofu. Used up lots of veggies that were in the fridge, and it made so much that we have leftovers for lunch tomorrow. Yay!
